Peaches & Cream Overnight Oats

If you’re anything like me, breakfast is one of the hardest meals of the day to eat healthy.  You’re running around, trying to get your kids ready, trying to get yourself ready, try not to step on the Legos that were left out on the floor. . .You get my point. Mornings are rough around this place. Most days, I have my superfoods shake for breakfast, but some days that just won’t do it; I want something to EAT.

That’s where these overnight oats come in! They take about five minutes to prep, they go in the fridge overnight, pop in the microwave for a few seconds in the morning (if you like them hot) and you’re ready to go. Plus, you can prep about a week’s worth at a time – bonus! They are so easy and can be made healthy so you’re not reaching for a donut or a coffee with 600 calories and a lifetime of sugar sprinkled in.

I have a few recipes that I enjoy, but the Peaches and Cream is hands down my favorite. It has the perfect mix of tangy and sweet flavor with no side of guilt (gotta love that guilt).

The fact that I recently replaced all the cups in my house with mason jars just makes it that much easier because I already have the lids ready to go.

With school starting next week, the chaos in the Atwood residence will likely be tripled, and these are the perfect solution to morning panic and sugary cereals.

Peaches & Cream Overnight Oats

Makes 4 servings

Prep time: 5 minutes

Total time: 8 hours 5 minutes

 

Ingredients
  • 2 cups old fashioned oats
  • 2 cups vanilla Greek yogurt
  • 2 cups low-fat or almond milk
  • 2 large peaches, pitted and diced
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
Directions
  1. Place all ingredients in a large bowl and mix well
  2. Separate into 4 mason jars (or other containers with airtight lids)
  3. Place in refrigerator overnight
  4. In the morning, stir with a spoon and place in microwave for 20 seconds or until heated through. If desired, Oats may also be eaten cold.
  5. Enjoy!
